Spiralized Sweet Potato Egg in a Hole

Ingredients

    1 medium sweet potato
    2 tablespoons coconut oil, divided
    1/2-1 teaspoon garlic powder
    2 eggs
    1/4 cup egg whites, divided
    salt and pepper, to taste

Instructions
